Slutty Brownies

A few months after returning to Texas we had a housewarming party, of course! Like any good southerner would do, we invited everyone from high school to college to old co-workers, and bring your friend or two! In Texas, it’s customary to bring a contribution to the party – either an appetizer, dessert, or drink. Well, my good friend Caroline, brought these little goodies, and oh my, they were the HIT of the event. I’ve made these slutty brownies several times over using box mixes in the U.S. and from scratch in Europe, and no matter what, they aren’t a tease. . .these slutty goodies deliver, Shugar!

The idea behind this delicious and indulgent dessert is layering chocolate chip cookies, oreos, and brownies. So, let’s get started!

Preppin’

For the Cookie Dough layer: (If you’re in the U.S., you can go for the pre-made, packaged cookie dough!)
½ cup (113 grams) butter (at room temp)
¼ cup (50 grams) brown sugar
¾ cup (150 grams) white sugar
1 egg
1 ¼ tsp vanilla extract
1 ¼ cup (150 grams) flour
½ tsp salt (I like to use sea salt and perhaps a few more shakes)
½ tsp baking soda
½ tsp baking powder
1 cup semi-sweet chocolate chips

For the Oreo Layer:
Oreos! You can use anything you can find – regular, double-stuffed, pumpkin spice, red velvet – you imagination is only limited to the inventory in the country you reside in – heh!

For the Brownie layer: (Again, if you’re in the U.S., you’re welcome to use a box mix)
10 Tbsp (140 grams) butter
1 ¼ cups (250 grams) white sugar
¾ cup cocoa powder (See Pearl of Wisdom below)
½ tsp salt (again, chunky sea salt makes a nice, salty surprise if you’re into the salty-sweet combo)
2 tsp vanilla
2 large eggs
½ cup (60 grams) flour

Preparin’
Pre-heat oven to 350 degrees F (180 degrees Celsius)

Line the bottom of a 9X9 baking pan with aluminum foil and spray with a layer of baking spray.
(For my European readers – I’ve used a 14cm x 24 cm glass pan from Ikea – I have no idea if this size is ‘standard’ in Europe or not, but it works, too)

Prepare Cookie Dough layer:
Use a hand held mixer to cream together the butter and sugars. Add egg and vanilla. Add flour, salt, baking soda and baking powder and mix on low until all ingredients are combined. Use a spoon to fold in chocolate chips.

Layer the cookie dough on the bottom of a 9×9 baking pan, pressing down to form the bottom of the slutty brownies.

Layer oreos on top of the cookie dough. One layer is enough.

Prepare Brownie layer:
Using a double boiler or a bowl fitted inside a pot with small amount of water, melt the butter over medium heat (or you can melt it in the microwave – just keep an eye on it to keep it from melting too fast and exploding all over the microwave). Add the sugar and cocoa powder once the butter is melted. Whisk to combine and remove from heat. Add the salt, vanilla, eggs and continuously whisk until the eggs are combined. Add the flour and continue to mix.

Pour the Brownie Layer on top

Pour the brownie batter (attempting to evenly distribute) on top of the oreo layer.

Bake for 30 – 35 minutes. Test with a toothpick to ensure center is done. If toothpick comes out clean, let brownies rest for a couple hours before serving. If the toothpick still has batter on it, bake for five minutes more.

Pearl of Wisdom, Cocoa Powder – In the United States cocoa powder is often found in the baking section of the grocery store. In Europe I’ve found it shelved with the coffee. I can only assume hot cocoa is its primary use overseas.

Pearl of Wisdom, Baking Spray – Pam is a staple in most American kitchens. I found Bakspray at Jumbo grocery (in Netherlands) and at Albert Heijn (in Belgium or Netherlands). Considering this isn’t an item you can tuck into your suitcase because of the aerosol, I purchased a large can at the Grare’ American Food Store in Wilrijk outside of Antwerp.
